Ingredients
2 cups all-purpose flour1 cup sugar2-1/2 teaspoons baking powder1/2 teaspoon salt2 large eggs1/4 cup whole milk1/3 cup vegetable oil3 tablespoons lime juice1-1/2 teaspoons grated lime zest
Preparation
In a bowl, combine the first four ingredients. In another bowl, beat the eggs, milk, oil, lime juice and zest. Stir into dry ingredients just until moistened.
Fill paper-lined muffin cups two-thirds full. Bake at 400° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
