Ingredients

1/3 cup fresh lime juice3 garlic cloves, minced1/2 teaspoon ground ginger1/2 teaspoon crushed red pepper flakes1/4 teaspoon salt, optional1 pound boneless skinless chicken breast halves, cut into 1-inch stripsSALSA:2 cups diced fresh plum tomatoes1 cup diced green pepper1/2 cup diced red onion1 tablespoon minced fresh cilantro1 tablespoon olive oil1 tablespoon fresh lime juice2 garlic cloves, minced1/4 teaspoon salt, optional

Preparation

In a large resealable plastic bag, combine the lime juice, garlic, ginger, red pepper and salt if desired; add the chicken. Seal bag and turn to coat; refrigerate for 2-4 hours.

Meanwhile, combine all salsa ingredients; cover and refrigerate until ready to serve.

Discard marinade. In a large nonstick skillet, brown chicken for about 10 minutes or until chicken is no longer pink. Serve with salsa.
