Ingredients

1/2 cup sugar2-1/2 teaspoons cornstarch1 teaspoon ground cinnamon1/4 teaspoon ground allspice3/4 cup water4 cups fresh or frozen blueberries1 cup egg substitute1 cup fat-free milk1 teaspoon vanilla extract1/2 teaspoon salt12 slices French bread (1 inch thick)

Preparation

In a large bowl, combine the sugar, cornstarch, cinnamon and allspice; stir in water until smooth. Add blueberries; mix well. Transfer to a 13-in. x 9-in. baking dish coated with cooking spray.

In a large bowl, beat the egg substitute, milk, vanilla and salt. Dip each slice of bread into egg mixture; arrange slices over berries.

Bake at 400° for 20-25 minutes or until toast is golden brown and blueberries are bubbly.
