Ingredients
2 cups sugar1-3/4 cups all-purpose flour3/4 cup baking cocoa1-1/2 teaspoons baking soda1-1/2 teaspoons baking powder1 teaspoon salt1/2 cup egg substitute (equivalent to 2 eggs)1 cup fat-free milk1/2 cup unsweetened applesauce2 teaspoons vanilla extract1 cup boiling waterConfectioners’ sugar, optional
Preparation
In a large bowl, combine dry ingredients. Beat in egg substitute, milk, applesauce and vanilla. Add water; beat on medium for 2 minutes (batter will be very thin).
Pour into a 13x9-in. baking pan coated with cooking spray. Bake at 350° for 30 minutes or until a toothpick inserted in the center comes out clean. Cool. Lightly dust with confectioners’ sugar if desired.
