Ingredients
1 c. all-purpose flour
1 tsp. ground ginger
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/4 tsp. cloves
1/2 c. butter
1/4 c. packed brown sugar
1/4 c. granulated sugar
1 egg yolk
2 tsp. lemon juice
2 tsp. grated lemon rind
Preparation
Step 1Sift together flour, ginger, nutmeg, cinnamon and cloves. Set aside.Step 2Cream butter in a separate bowl or in an electric mixer. Add sugars, egg yolk and
lemon juice and rind and beat well. Stir in flour mixture until blended. Gather
dough into a ball and refrigerate for 1 hour.Step 3Preheat oven to 350 degrees F.Step 4Lay half of dough between sheets of plastic wrap and roll out thinly. Use a cookie
cutter to cut into 2-inch rounds. Repeat with remaining dough.Step 5Bake on ungreased cookie sheets for 6 to 8 minutes or until golden. Cool on racks.
tight tin. You can decorate each cookie with a tiny piece of crystallized ginger if you want.
