Ingredients
1/2 c. granulated sugar
1/2 c. water
1 c. fresh or frozen blueberries
Zest of 1 medium lemon
Ice
2 oz. light rum
1 oz. freshly squeezed lemon juice
3/4 oz. prepared simple syrup
Fresh blueberries, for garnish
Lemon peel, for garnish
Preparation
Step 1In a medium saucepan over medium heat, combine sugar and water and stir until sugar has dissolved. Add blueberries and bring mixture to a boil. Reduce heat and simmer until blueberries have burst, about 5 minutes.Step 2Remove from heat, stir in lemon zest, and let cool 10 minutes. Strain mixture into a clean jar and let cool to room temperature, about 20 minutes. (You will have enough blueberry simple syrup for at least 4 drinks.)Step 3Fill a shaker with ice. Add rum, lemon juice, and simple syrup and shake until chilled. Strain into a chilled coupe and serve garnished with blueberries and a lemon peel.
