Ingredients

1 flour tortilla

1 tbsp. Mayonnaise (optional)

2 or 3 big lettuce leaves

3/4 c. chopped cooked chicken

1 c. diced peaches (If fresh peaches aren’t in season, use frozen ones. 11⁄2 cups of frozen peaches becomes 1 cup when thawed and diced.)

1/4 c. diced purple onion

3/4 tsp. minced chili pepper (optional)

1/2 tsp. salt

1 tsp. white vinegar

1/4 tsp. garlic powder

Preparation

Step 1To make the salsa: Use a wooden spoon to stir all of the ingredients together in a mixing bowl. You can store extra salsa in the refrigerator for three days.Step 2Spread mayo on the tortilla, making sure you go all the way to the edge. Then arrange the lettuce on the tortilla, leaving a strip of mayonnaised tortilla showing at the edges. (This will help it stick together when you roll it up.) Next, pile on the chicken and Peach Salsa.Step 3Roll ’er up and take a bite.
