Ingredients

1 medium jicama, peeled and julienned1 small cucumber, seeded and julienned1/2 cup thinly sliced red onion1 can (4 ounces) chopped green chiles2 tablespoons lime juice2 tablespoons olive oil3/4 teaspoon salt1 garlic clove, minced1/2 teaspoon grated lime zest1/4 teaspoon pepper

Preparation

In a large bowl, combine the jicama, cucumber, onion and chiles. In a small bowl, whisk the remaining ingredients. Pour over jicama mixture; toss to coat. Cover and refrigerate for at least 1 hour.
