Ingredients

3 eggs

1/2 c. superfine sugar

2 tbsp. milk

3/4 c. self-rising flour

1/4 c. superfine sugar

1/2 c. jam

Preparation

Step 1Preheat oven to 400 degrees F/350 degrees F fan forced. Grease 10-inch × 12-inch jelly roll pan; line base with parchment paper, extending paper 2 inches over short sides.Step 2Beat egg whites in small bowl with electric mixer until soft peaks form; add sugar, 1 tablespoon at a time, beating until dissolved between additions. With motor running, add egg yolks, one at a time, beating until mixture is pale and thick; this will take about 10 minutes.Step 3Pour hot milk down side of bowl; add triple-sifted flour. Working quickly, use plastic spatula to fold milk and flour through egg mixture. Pour mixture into pan, gently spreading evenly into corners.Step 4Bake cake about 8 minutes.Step 5Meanwhile, place a piece of parchment paper cut the same size as pan on counter; sprinkle evenly with extra sugar.Step 6Turn cake immediately onto sugared paper; peel away lining paper. Use serrated knife to trim crisp edges from all sides of cake.Step 7Using paper as a guide, gently roll warm cake loosely from one of the short sides. Unroll; spread evenly with jam.
