Ingredients
3 tablespoons olive oil, divided1 can (20 ounces) jackfruit, rinsed, drained and chopped1 envelope reduced-sodium taco seasoningGREEN APPLE SALSA:1/2 medium ripe avocado, peeled and cubed1/2 cup chopped baby cucumber1/2 cup chopped green apple1/4 cup chopped green pepper2 tablespoons thinly sliced green onions1/2 jalapeno pepper, seeded and minced4 teaspoons lime juice1 tablespoon chopped fresh cilantro1/4 teaspoon sea saltSOUR CREAM SAUCE:1/4 cup sour cream2 tablespoons 2% milk6 flour tortillas (6 inches), warmed
Preparation
In a large skillet, heat 2 tablespoons oil over medium-high heat. Add jackfruit; cook and stir until caramelized, 8-10 minutes. Stir in taco seasoning and remaining 1 tablespoon oil; mix well. Remove from the heat; keep warm.
In a small bowl, mix all green salsa ingredients. For sour cream sauce, whisk together sour cream and milk until smooth. Serve jackfruit in tortillas with salsa, sour cream sauce and, if desired, lime wedges.
