Ingredients

1/2 cup olive oil1/4 cup red wine vinegar2 garlic cloves, minced1 teaspoon sugar1/2 teaspoon dried oregano1/2 teaspoon salt1/4 teaspoon pepper1 small head lettuce, torn1/2 cup sliced green onions1/2 cup chopped celery1/2 cup shredded part-skim mozzarella cheese1 can (2-1/4 ounces) sliced ripe olives, drained1 medium tomato, cut into wedges2 tablespoons shredded Parmesan cheese

Preparation

In a bowl, whisk the first seven ingredients; set aside. In a large bowl, combine the lettuce, onions, celery, mozzarella cheese, olives and tomato. Just before serving, add the dressing and toss. Sprinkle with Parmesan cheese.
