Ingredients

2 c. sugar

1/4 c. water

1/2 tsp. lemon juice

1/2 stick unsalted butter

1 3/4 c. whipping cream

1 tsp. orange zest

2 c. all-purpose flour

1 tbsp. baking powder

1 tsp. salt

1 tbsp. sugar

1 tbsp. canola oil

3/4 c. warm water

cinnamon sugar

4 ripe bananas

4 scoop vanilla ice cream

Preparation

Step 1Make the caramel sauce: Place the sugar, water, and lemon juice in a large saucepan. Gently stir the solution to moisten the sugar. Cook the sugar over high heat until it reaches a light caramel color. Lower the heat and whisk in the butter. Carefully whisk in the cream and orange zest. Cook briefly, stirring constantly, until the sauce is smooth. Strain and refrigerate.Step 2Make the Indian fry bread: Mix the dry ingredients together in a bowl. Stir in the oil and water. Knead the dough lightly until it is smooth and elastic. Divide the dough into 8 balls and cover with plastic wrap. Allow the dough to rest in the refrigerator for 20 minutes. Lightly press the dough flat and then roll into a 6-inch circle. Fry in at least one inch of oil heated to 350 degrees F until golden brown on each side. While the bread is still warm, drain on paper towels and lightly dust with cinnamon sugar.Step 3Assemble the dessert: Slice bananas and warm in 1 1/2 cups of the caramel sauce. Plate four pieces of the warm fry bread and spoon the warm bananas on top of each piece of fry bread. Place a scoop of vanilla ice cream on top of the bananas and garnish with a little orange zest.
