Ingredients

4-1/3 cups cornmeal3/4 cup all-purpose flour6-1/2 teaspoons baking powder2 tablespoons sugar2 tablespoons garlic powder1 tablespoon pepper1 tablespoon salt1/2 teaspoon crushed red pepper flakesADDITIONAL INGREDIENTS:1 can (8-1/4 ounces) cream-style corn1/2 cup chopped onion1 eggOil for deep-fat frying

Preparation

In a large bowl, combine the first eight ingredients. Store in an airtight container in a cool, dry place for up to 6 months. Yield: 3 batches (4-1/2 cups total).

To prepare hush puppies: In a large bowl, combine 1-1/2 cups mix, corn, onion and egg; stir just until moistened. In an electric skillet or deep-fat fryer, heat 1-1/2 in. of oil to 375°. Drop batter by teaspoonfuls into oil; fry until golden brown. Drain on paper towels. Serve warm.
