Ingredients

8 slices bacon, cut into 1" pieces

2 shallots, minced

1/3 c. maple syrup

2 tbsp. apple cider vinegar

1/4 c. cinnamon sugar

2 large eggs

1/2 c. whole milk

1/4 tsp. pure vanilla extract

8 slices white bread, crusts removed

3 tbsp. butter

Preparation

Step 1Make bacon filling: In a medium saucepan over medium heat, cook bacon, stirring occasionally, until crispy, about 8 minutes. Transfer bacon to a paper towel–lined plate, reserving about a tablespoon of bacon fat in the pan.Step 2Reduce heat to medium-low. Add shallots to pan and cook, stirring often, until golden, about 3 minutes. Step 3Stir in maple syrup, vinegar, and cooked bacon. Bring mixture to a simmer then reduce heat to low. Cook until the liquid has reduced and thickened and the shallots are jammy, about 7 minutes.Step 4Make roll-ups: Place cinnamon sugar on a plate and set aside. In a shallow bowl, whisk together eggs, milk, and vanilla and set aside. Step 5Roll out each slice of bread until flat and thin. Spread a thin layer of filling onto each slice, then roll up tightly. Briefly dunk each roll-up into egg mixture.Step 6In a large nonstick skillet, melt butter over medium heat. Add roll-ups to skillet seam side down. Cook, in batches, until golden all over, about 2 minutes per side. Dip cooked roll-ups in cinnamon sugar and transfer to plate to cool. Repeat with remaining butter and roll-ups.Step 7Serve with maple syrup for dunking.
