Ingredients

Cooking spray, for muffin tin

12 oz. No Yolks® Extra Broad Noodles

2 large eggs, beaten (or 4 egg whites)

1/2 c. grated Parmesan

2 1/2 c. shredded mozzarella

1 c. marinara

4 oz. cream cheese, softened

2 cloves garlic, minced

1 tsp. dried oregano

1/2 tsp. crushed red pepper flakes

kosher salt

Freshly ground black pepper

1 c. mini pepperoni, divided

Torn fresh basil, for garnish

Preparation

Step 1Preheat oven to 350F and grease a nonstick muffin tin with cooking spray. Cook noodles according to package directions. Drain.Step 2In a small bowl, combine eggs, Parmesan, 2 cups mozzarella, marinara, cream cheese, garlic, oregano, and red pepper flakes. Season with salt and pepper, then add ½ cup pepperoni. Add cooked noodles and toss until fully combined. Step 3Fill muffin cups with noodle mixture and sprinkle with remaining mini pepperoni. Season with salt and pepper.Step 4Bake until cups are set and pepperoni are crisp, 30 minutes.Step 5Garnish with basil.
