Ingredients

Kosher salt 

1 lb. fresh or frozen bite-sized broccoli florets

1 lb. elbow macaroni

1 c. milk

1/2 c. half-and-half

6 tbsp. butter

1 tsp. garlic powder

1/2 tsp. white pepper

1 tsp. Old Bay seasoning

2 tsp. all-purpose flour

1 1/2 c. shredded sharp cheddar 

1 c. shredded Monterey jack cheese

1 c. shredded Muenster cheese 

Preparation

Step 1In a large pot of salted boiling water over medium heat, blanch fresh or frozen broccoli until bright green, 2 to 4 minutes. Remove broccoli with a sieve or spider and set aside.Step 2Add pasta to boiling water and cook until al dente, about 8 minutes. Reserve 1 cup pasta water, then drain pasta and return to pot.Step 3Heat the milk and half and half in the microwave, checking every 30 seconds, until almost scalded, about 1 ½ to 2 minutes.Step 4Return pot with cooked pasta to medium heat, then add the butter and spices. Once the butter has melted, stir in the flour, then add milk and cheese while stirring. Stir in half the pasta water, then keep stirring until cheese is melted and sauce is creamy and thick. Stir in reserved broccoli, and add in more pasta water if needed.
