Ingredients
3 slices white bread
melted butter
1 large egg
2 slices American or cheddar cheese
3 strips bacon, cooked
2 slices ham
Preparation
Step 1Cut about a 3" circle out of the middle of one slice of bread. (You can press the mouth of a drinking glass into the bread, cutting around it, to get an even circle.)Step 2Melt butter in a large frying pan or on a flat-top grill over medium heat. Place all three slices of bread in the pan. Top the two whole slices of bread with a slice of cheese. Crack an egg into the slice of the bread with a hole in it, letting it cook until the white has set, about two minutes. Step 3As the egg cooks, warm the ham in the pan (if you have room). If not, heat it in a second sauté pan. Place the ham and cooked bacon on each of the slices of cheese-topped bread.Step 4Once the egg has set, slide a spatula under that slice of bread and put it on top of the bacon-and-cheese-covered bread. Top it with the ham-and-cheese-covered slice, forming a triple-decker grilled cheese sandwich. Plate and serve.
His most famous creation is so popular its earned a spot on the cafe’s menu, popping up about twice a month. It’s known as Junior’s Triple-Decker Grilled Cheese, an egg-in-a-hole sandwich that combines bacon, ham and cheese into a monstrous meal that blurs the lines between breakfast and lunch — and has even the most health-conscious editors lining up to try it. Cafe57 isn’t open to the public, so you have to have an in with an editor to try Junior’s creations, but the restaurant agreed to share its recipe with you, so you can make it at home.
