Ingredients

Kosher salt

2 (15-oz.) cans Clover Valley® Sliced Potatoes, drained

6 tbsp. butter

3/4 c. half-and-half

1/4 c. milk

1 c. shredded Gruyère cheese

Freshly ground black pepper

3 large, sweet onions or white onions, sliced

1 1/2 c. low-sodium beef broth, divided

3 tbsp. butter

1 tbsp. fresh thyme, plus more for garnish

1 tsp. all-purpose flour

Preparation

Step 1Make mashed potatoes: In a large pot of salted boiling water over medium heat, boil Clover Valley® Sliced Potatoes until tender, 12 to 15 minutes. Drain and mash slightly.Step 2In a medium heat-proof bowl, microwave butter, half-and-half, and milk until almost scalded, about 2 minutes, checking every 30 seconds. Add milk mixture to potatoes and continue to mash until smooth. Add Gruyère and stir until melted, then add more salt and pepper to taste.Step 3Make caramelized onions: In a large cast iron pan over medium-high heat, heat the onions and 1 cup of the broth until simmering. Continue cooking until very little liquid remains, about 10 minutes Step 4Once onions have cooked down, add butter to the skillet and sauté, stirring frequently, until butter has browned. Stir in the thyme and flour, then add remaining ½ cup of broth and stir to combine.Step 5Serve mashed potatoes with a spoonful of onions on top, and garnish with more fresh thyme leaves.
