Ingredients

1 c. sliced cabbage or pre-sliced slaw mix

1/4 medium red onion, thinly sliced

2 tbsp. red wine vinegar

1 tbsp. extra-virgin olive oil

1 tbsp. sweet pickle juice

Kosher salt

Freshly ground pepper

1 (10-oz.) can chicken, drained and fluffed with a fork

1/4 c. celery, diced small

1/4 c. dried cranberries, roughly chopped

1 1/2 tbsp. Clover Valley® Shelled Walnuts, roughly chopped

2 tbsp. chopped sweet pickles

1 tbsp. sweet pickle juice

1 1/2 tbsp. Dijon mustard

1/4 c. light mayonnaise

3 tbsp. nonfat Greek yogurt

1 tbsp. freshly chopped parsley

1/2 tsp. ground cumin

1/2 tsp. smoked paprika

Kosher salt

Freshly ground black pepper

6 slices whole grain bread

Preparation

Step 1Make slaw: In a small bowl, stir to combine cabbage, onions, vinegar, oil, and sweet pickle juice. Season with salt and pepper to taste.Step 2Make chicken salad: In a medium bowl, stir to combine chicken along with the remaining chicken salad ingredients. Season to taste with salt and pepper.Step 3Divide chicken salad between 3 slices of bread, then top with slaw and remaining slices of bread.
