Ingredients

1 3/4 c. unbleached all-purpose flour

1 tbsp. sugar

2 1/2 tsp. baking powder

1/2 tsp. kosher salt

1 1/2 milk, room temperature

3 tbsp. unsalted butter, melted

1 large egg, room temperature

Cooking spray

24 chicken or turkey breakfast sausages

1 tbsp. extra-virgin olive oil

1 c. Heinz Chicken Gravy

1/4 c. maple syrup, plus more for serving

Preparation

Step 1In a medium bowl, whisk the flour, sugar, baking powder, and salt until well combined. In another medium bowl, whisk the milk, butter, and egg until well combined. Pour the dry ingredients into the wet ingredients and stir until just combined (some lumps are okay).Step 2Grease a large nonstick skillet with cooking spray and place over medium heat. Ladle about 2 tablespoons pancake batter into skillet. When little bubbles appear, after about 1 minute, flip and continue cooking until both sides are lightly golden, about 30 seconds more. Repeat with remaining batter and more cooking spray. As each pancakes is done, remove to a plate or baking sheet and fold in half. Step 3When all the pancakes are cooked, add the sausages and oil to the skillet and cook over medium heat, turning a few times, until sausages are golden all over, about 6 minutes. Remove sausage to a plate and pour the gravy into the skillet. Bring the gravy to a simmer over medium heat, stirring, then add 1/4 cup maple syrup and stir to combine. Remove from the heat.Step 4Dollop about 1/2 teaspoon of gravy into the center of each pancake and top with a sausage, securing with a toothpick, if desired. Serve pancake roll ups with remaining gravy and additional maple syrup for dipping.

Coffron is a fan of these tasty roll-ups for breakfast, but says you can also serve them for lunch, dinner, or even as a fun party appetizer or snack. Don’t forget to add a dollop of maple syrup-infused Heinz Chicken Gravy on the pancake before you add the sausage and roll it all together, and save some sauce on the side for additional dipping.
