Ingredients

1 can (15-1/4 ounces) whole kernel corn, drained2 cans (4 ounces each) chopped green chiles, drained1/2 cup chopped sweet red pepper1 cup shredded Monterey Jack cheese2 tablespoons chopped jalapeno pepper1 cup mayonnaise1/2 cup grated Parmesan cheese2 tablespoons sliced ripe olivesTortilla chipsSliced green onions, optional

Preparation

Preheat oven to 350°. In a large bowl, combine corn, chiles, red pepper, Monterey Jack cheese and jalapeno. Stir in mayonnaise and Parmesan cheese. Transfer to an ungreased 1.5-qt. baking dish.

Cover and bake until heated through, 25-30 minutes. Sprinkle with olives and if desired, green onions. Serve with tortilla chips.
