Ingredients

3/4 cup cream-style cottage cheese1/2 cup sour cream2 to 3 tablespoons sugar4-1/2 teaspoons cider vinegar2 teaspoons prepared horseradish3/4 teaspoon ground mustard1/4 teaspoon salt10 cups chopped fresh spinach1 cup chopped pecans, toasted6 bacon strips, cooked and crumbled

Preparation

In a food processor, combine cottage cheese and sour cream; cover and process until smooth. Add the sugar, vinegar, horseradish, mustard and salt; cover and process until smooth.

In a salad bowl, toss spinach with pecans and bacon. Serve with dressing.
