Ingredients

2 pounds fingerling potatoes, halved lengthwise1/4 cup finely chopped onion3 tablespoons olive oil2 tablespoons honey2 garlic cloves, minced2 teaspoons ground mustard1 teaspoon dried parsley flakes2 teaspoons sea salt1/2 teaspoon coarsely ground pepperAdditional honey, optional

Preparation

Preheat oven to 375°. Place potatoes in a greased 15x10x1-in. baking pan. In a small bowl, combine remaining ingredients. Pour over potatoes; toss to coat. Bake, uncovered, until golden and tender, about 35-40 minutes, stirring once half-way through cooking. If desired, drizzle with additional honey.
