Ingredients

3 Chicken Breasts, cubed

3 chipotle peppers in adobo sauce, chopped

2 tbsp. adobo sauce (from the chipotle pepper can)

2 tbsp. honey

1/4 c. olive oil

1/2 tsp. garlic powder

1/4 tsp. chili powder

1 tsp. salt

1 tbsp. vegetable oil

1 lime, sliced into wedges

8 hard taco shells

2 scallions, thinly sliced

Sour cream, for serving

Preparation

Step 1Combine peppers, adobo sauce, honey, olive oil, and spices in a medium bowl. Whisk to combine, then add chicken. Cover with plastic wrap and marinate in refrigerator for at least 15 minutes and up to 2 hours. Step 2Heat vegetable oil in a large skillet over medium-high heat. Season marinated chicken with salt and pepper to taste. When the oil is hot, sauté chicken until browned and cooked through, about 8 to 10 minutes. Step 3Serve in taco shells with scallions, sour cream and lime juice.
