Ingredients
1 box corn muffin mix
2 large eggs
1/4 c. canola oil
1/4 c. honey
1 tsp. ground mustard
1/2 lb. sliced country ham or French ham
1/4 lb. Swiss or Gruyère cheese
Spicy pickles, for serving
Preparation
Step 1Preheat Krups Deluxe Convection Toaster Oven to 350°. In a mixing bowl, stir together muffin mix, eggs, oil, honey and mustard. Step 2 Prepare a 9"-x-13" quarter sheet pan with cooking spray and parchment paper. Pour cornbread batter into pan and spread evenly into a smooth thin layer. Place into oven and cook until golden brown, about 15 minutes. Remove from oven and cool completely. Step 3Once cool, slice into 8 even pieces. Take four pieces of cornbread and layer a few slices each of ham and cheese on top. Top each sandwich with another piece of cornbread and return to oven to toast sandwich and melt cheese. Serve with spicy pickles.
