Ingredients

2 pounds ground pork2 teaspoons ground sage1-1/2 teaspoons salt1-1/2 teaspoons pepper1/2 teaspoon cayenne pepper1/2 teaspoon brown sugar

Preparation

In a bowl, combine all ingredients; mix lightly but thoroughly. Shape into eight 4-in. patties.

In a large skillet over medium heat, cook patties until a thermometer reads 160°, 3-4 minutes on each side. Remove to paper towels to drain.

Freeze option: Prepare uncooked patties and freeze, covered, on a foil-lined baking sheet until firm. Transfer patties to a freezer container; return to freezer. To use, cook frozen patties as directed, increasing time as necessary for a thermometer to read 160°.
