Ingredients

1 1/2 c. whole-wheat flour

1/2 c. graham flour

1 c. all-purpose flour

1/2 tsp. salt

1/2 tsp. baking soda

1 tsp. baking powder

1 stick unsalted butter

1/2 c. sugar

2 tbsp. molasses

1/4 c. honey

2 tsp. vanilla extract

1/4 c. buttermilk

Preparation

Step 1Whisk the flours, salt, baking soda, and baking powder together. Set aside.Step 2Beat the butter, sugar, molasses, honey, and vanilla on medium-high speed until light and fluffy. Turn to low and add the flour mixture and buttermilk in alternating batches, starting and ending with the flour mixture. Cover and refrigerate 4 hours to overnight.Step 3Preheat the oven to 350 degrees F. Roll the dough out to about an 1/8-inch-thick rectangle. (You might need to divide the dough up to make it more manageable.) Cut into squares and place on cookie sheets.Step 4Poke holes into the top of each square and bake for 15 minutes or until just slightly more golden brown. Cool on wire racks.
