Ingredients

Vegetable oil or cooking spray, for pan

2 c. all-purpose flour, plus more for pan

1 tsp. baking soda

1/2 tsp. baking powder

1/2 tsp. kosher salt

2 c. mashed ripe banana (from about 4 large bananas)

6 tbsp. smooth peanut butter

2 large eggs

1/4 c. pure maple syrup

2 c. unsweetened Greek yogurt

1 c. smooth peanut butter

2 tbsp. pure maple syrup

Preparation

Step 1Make cake: Preheat oven to 350° and grease and liberally flour 2 8” cake pans.Step 2In a medium bowl, whisk to combine flour, baking soda, baking powder, and salt.Step 3In a large bowl, combine mashed banana, peanut butter, eggs, and maple syrup. Whisk until smooth, then fold in dry ingredients. Divide mixture evenly between 2 prepared pans.Step 4Bake until a toothpick inserted into the center of the cake comes out clean, 20 to 25 minutes. Let cool 10 minutes, then tip out onto cooling racks to cool completely.Step 5Meanwhile, make frosting: in a large bowl, combine yogurt, peanut butter, and maple syrup and whisk or beat with a hand mixer until smooth.Step 6Place 1 cake on serving plate and top with roughly ⅓ of the frosting, spreading in an even layer. Top with second cake, flat side up. Frost the top and sides of the cake, reserving some frosting to be piped on top for decoration if desired.
