Ingredients

1/4 cup sliced celery1/4 cup chopped onion1-1/2 teaspoons butter1 can (15-1/2 ounces) black-eyed peas, rinsed and drained1 cup water3/4 cup Italian stewed tomatoes, cut up1/2 cup cubed fully cooked ham1/2 teaspoon Italian seasoning1/8 teaspoon pepperPinch salt

Preparation

In a large saucepan, saute celery and onion in butter until tender. Add the peas, water and tomatoes. Bring to a boil. Stir in the ham, Italian seasoning, pepper and salt. Reduce heat; simmer, uncovered, until heated through, about 20 minutes.
