Ingredients

2 medium yellow summer squash, sliced2 medium carrots, sliced1 small onion, sliced2 tablespoons olive oil1 garlic clove, minced1/2 teaspoon grated lemon zest1/4 teaspoon dried rosemary, crushed1/4 teaspoon pepper1/8 teaspoon salt

Preparation

In a large skillet, saute the squash, carrots and onion in oil for 5-7 minutes or until tender. Add the remaining ingredients; cook 1 minute longer.
