Ingredients

1 cup quick-cooking oats1/2 cup all-purpose flour1/2 cup whole wheat flour1 tablespoon sugar1 teaspoon baking powder1/2 teaspoon baking soda1/4 teaspoon salt1 egg, lightly beaten2 cups buttermilk2 tablespoons canola oil1 teaspoon vanilla extractAssorted berries, optional

Preparation

In a large bowl, combine the first seven ingredients. In a small bowl, combine the egg, buttermilk, oil and vanilla. Stir into the dry ingredients just until moistened.

Pour batter by 1/4 cupful onto a hot griddle that has been coated with cooking spray. Turn when bubbles form on top; cook until the second side is golden brown. Serve with berries if desired.
