Ingredients

1 pound bulk pork sausage1/2 cup chopped onion1-1/2 cups shredded cheddar cheese, divided1 package (10 ounces) frozen chopped spinach, thawed and well drained1 jar (4-1/2 ounces) sliced mushrooms, drained12 large eggs2 cups heavy whipping cream1/4 teaspoon ground nutmeg

Preparation

In a large skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Remove from the heat; stir in 1 cup cheese, spinach and mushrooms. Transfer to a greased 13x9-in. baking dish.

In a bowl, beat eggs. Add cream and nutmeg; mix well. Pour over sausage mixture. Bake, uncovered, at 350° or until a knife inserted in the center comes out clean. Sprinkle with remaining cheese. Let stand for 5 minutes before cutting.
