Ingredients

1/4 c. coconut oil, melted 

1 c. pumpkin puree

1/3 c. maple syrup

2 large eggs

1/4 c. Greek yogurt

3/4 c. all-purpose flour

3/4 c. whole wheat flour

2 tsp. pumpkin pie spice

1 tsp. cinnamon

1/2 tsp. baking soda

1/2 tsp. baking powder

1/2 tsp. kosher salt

Preparation

Step 1 Preheat oven to 325° and line a 9"-x-5" loaf pan with parchment paper. In a large bowl, whisk to combine coconut oil, pumpkin puree, maple syrup, eggs, and yogurt.Step 2In a medium bowl, whisk to combine flours, spices, baking soda, baking powder, and salt. Fold dry ingredients into wet ingredients until just combined.Step 3Transfer batter to prepared pan and smooth into an even layer. Bake until a toothpick inserted into the center of the loaf comes out clean, about 50 minutes to 1 hour.
