Ingredients

1 pound ground beef or turkey1 large onion, chopped4 large potatoes, peeled and cubed4 large carrots, grated4 celery ribs, chopped1/2 small head cabbage, shredded1/4 cup uncooked long grain rice1 quart water1 can (28 ounces) diced tomatoes, undrained1 can (8 ounces) tomato sauce1 can (15 to 16 ounces) kidney beans, rinsed and drained2 bay leaves1 teaspoon dried basil1 teaspoon dried thyme3/4 teaspoon pepper1/2 teaspoon dill weed1 to 2 teaspoons salt, optional

Preparation

In a Dutch oven or soup kettle, brown meat and onion; drain. Add remaining ingredients; bring to a boil. Reduce heat and simmer, uncovered, for 2-3 hours. Remove bay leaves before serving.
