Ingredients

2 cups all-purpose flour1/4 cup sugar2 teaspoons baking powder1 teaspoon salt1/4 teaspoon pepper6 large eggs, room temperature1 cup 2% milk1/2 pound fully cooked ham, cubed1/2 pound cheddar cheese, diced or shredded1/2 pound sliced bacon, cooked and crumbled1 small onion, finely chopped

Preparation

In a large bowl, combine the flour, sugar, baking powder, salt and pepper. Beat eggs and milk; stir into dry ingredients until well combined. Stir in the ham, cheese, bacon and onion. Fill well-greased muffin cups three-fourths full.

Bake at 350° until a toothpick inserted in the center comes out clean, about 45 minutes. Cool for 10 minutes before removing to a wire rack.
