Ingredients

1 tbsp. garlic

c. red onion

4 Roma tomatoes

8 peppadews

2 tbsp. capers

2 tbsp. Italian parsley

1 tsp. Extra virgin olive oil

2 tbsp. peppadew juice

1 tsp. Freshly cracked black pepper

1 tbsp. Extra virgin olive oil

1/2 lb. lean ground beef

1/2 lb. Italian turkey sausage

1/4 yellow onion

2 clove garlic

1/4 c. ricotta cheese

1/4 c. sour cream

8 oz. mozzarella

2 oz. hard salami

1 tbsp. basil

1 tbsp. Italian parsley

4 green onions

3 c. canola oil

1 package wonton wrappers

Preparation

Step 1For Italian salsa: Combine all ingredients in a nonreactive bowl. Stir well to combine and set aside to marry.Step 2For filling: In a medium sauté pan over medium high heat, add 1/2 olive oil, and ground beef and sausage. Cook until cooked through and remove from pan. Add remaining olive oil and sauté onion for 4 to 5 minutes, until starts to turn opaque. Add in garlic and cook for 2 minutes more, being careful not to burn the garlic. Add back in the meat mixture, combine and set aside.Step 3For toppings: Combine ricotta cheese and sour cream in a small food processor or blender, place into a resealable bag, and set aside. Prepare all other ingredients and set aside.Step 4For chips: In a heavy skillet, heat oil to 350 degrees F. Add wonton wrappers, just a few at a time, as they cook extremely fast. As soon as they puff, flip, and they will start to brown. Remove to a paper towel-lined plate. Sprinkle with salt as they come out.Step 5In an oven-safe dish, arrange a layer of chips, then some meat mixture (reheated if necessary). Sprinkle with mozzarella and repeat, layering up and finishing with cheese. Place under broiler until cheese is melted. (Don’t take your eyes off this step.) Remove from oven and top with salami, fresh herbs, green onions, pepperoncini rings if using, and salsa. Cut hole in corner of ricotta/sour cream mix and drizzle over. Serve immediately.
