Ingredients

1/4 pound ground beef1/8 to 1/4 teaspoon garlic powder1/8 teaspoon pepper1 cup biscuit/baking mix1/4 cup cornmeal1/4 cup cold butter, cubed2 to 3 tablespoons boiling water1 large egg1/2 cup half-and-half cream1 tablespoon chopped green onion1 tablespoon chopped sweet red pepper1/8 to 1/4 teaspoon salt1/8 to 1/4 teaspoon cayenne pepper1/2 cup finely shredded cheddar cheese

Preparation

Preheat oven to 375°. In a large saucepan over medium heat, cook the beef, garlic powder and pepper until meat is no longer pink; crumble beef; drain and set aside.

Meanwhile, in a small bowl, combine biscuit mix and cornmeal; cut in butter until crumbly. Add enough water to form a soft dough.

Press onto the bottoms and up the sides of greased miniature muffin cups. Place a teaspoon of the beef mixture into each shell.

In a small bowl, combine the egg, cream, onion, red pepper, salt and cayenne; pour over beef mixture. Sprinkle with cheese.

Bake for 20 minutes or until a knife inserted in the center comes out clean.
