Ingredients

4 red snapper fillets (6 ounces each)1 tablespoon olive oil2 teaspoons paprika1 teaspoon salt1 teaspoon onion powder1 teaspoon garlic powder1/2 teaspoon cayenne pepper1/4 teaspoon white pepper1/4 teaspoon each dried oregano, basil and thyme

Preparation

Spoon oil over fish. In a small bowl, combine the seasonings; sprinkle over fish and press into both sides. Cover and refrigerate for 30 minutes.

Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill fillets, covered, over medium heat or broil 4 in. from the heat for 3-5 minutes on each side or until fish flakes with a fork.
