Ingredients

1 lb. skirt steak

3 tbsp. fresh orange juice

2 tbsp. fresh lime juice

2 tbsp. soy sauce

1/3 c. cilantro, finely chopped

1 tsp. cumin

1/4 c. olive oil

2 avocados, mashed

3 1/2 tbsp. lime juice

1 garlic clove, minced

1 small red onion, finely chopped

2 tbsp. cilantro finely chopped

12 corn tortillas, warmed

1/3 c. cotija cheese

Preparation

Step 1Place the skirt steak in a zip-top bag or a deep baking dish. Whisk marinade ingredients together and pour over skirt steak. Set aside to marinate for at least 1 hour.  Step 2Heat a grill pan or cast-iron skillet over high heat and grill steak 3 minutes a side. Remove from the heat.Step 3Rest steak for 15 minutes. Step 4While the steak is resting, stir together all the guacamole ingredients and set aside. Step 5Slice steak into thin strips. Step 6Serve sliced steak on warm tortillas topped with guacamole, Good and Gather Medium Serrano Pepper Salsa, and crumbled cotija cheese.
