Ingredients

2 tablespoons minced fresh cilantro2 tablespoons olive oil1 tablespoon minced fresh chives1 garlic clove, minced1 pound uncooked medium shrimp, peeled and deveinedDIPPING SAUCE:1 cup fresh cilantro leaves1 cup fat-free mayonnaise1 jalapeno pepper, seeded1 garlic clove, peeled1 tablespoon white vinegar1 teaspoon sugarDash cayenne pepper

Preparation

In a large bowl, combine the cilantro, oil, chives and garlic. Add the shrimp; turn to coat. Cover and refrigerate for 1 hour.

In a blender, combine the sauce ingredients; cover and process until blended. Chill until serving.

Thread shrimp onto 4 metal or soaked wooden skewers. Grill, covered, over medium heat until shrimp turn pink, 2-3 minutes on each side. Serve with sauce.
